A couple of chunky Tuna steaks
1/2 tsp hot paprika/cayenne
Salt and pepper to coat Tuna
1/2 tbls whole black peppercorns
1/2 tbls butter
1/2 tbls rapeseed oil
Coat the Tuna with the salt, pepper, paprika mix.
Heat the oil and butter and add the whole peppercorns and cook slowly until they start to pop.
Increase the heat and add the Tuna... Cook for about 2 or 3 minutes per side, you will see it cook through at the side. Up to you how raw/well done you like it.
Remove the Tuna and let it rest for a few minutes. Slice and plate up drizzled with the pan juices and peppercorns...
Serve on a bed of steamed green veg or some slow fried/roasted colourful peppers...
Works well with the Tahini dressing.
