450g/1lb Chicken Breasts cubed (or Thighs on Bone)
Oil to fry
Sauce to whiz up and fry:
1 Large Onion, roughly chopped
2 Cloves Garlic, crushed
1 Tbsp of Tomato puree
1/2Cup Cashew Nuts
1 Tsp of Chilli Powder
1 Tsp of Salt
1/4 Tsp Turmeric
1 Tbsp of Lemon Juice
1 Tbsp Plain Yoghurt
Stock to cover the chicken in the pot.
Saltanas/Raisins/Satsumas/Oranges etc.
Brown off the chicken slowly in batches and add to the slow cooker.
Use the oil in the pan to fry off the whizzed up sauce for a few minutes and add to the slow cooker.
Throw in some fruits and add enough stock to just cover the chicken.
Cover and cook on High for 3-4 hours, stir and test the sauce flavours/texture, adjust as you think...
