Date and Red Wine Sauce

600ml Chicken Stock
250ml Red Wine
3 tablespoons Port
3 tablespoons Balsamic Vinegar
200g Dates - stoned and halved

1] Reduce the Stock, Wine, Port and Vinegar by two-thirds.
2] Soak the Dates in boiling water for 5 minutes.
3] Drain the Dates and add them to the reduced liquid.
4] Simmer for 5 minutes.
5] Check for seasoning and serve.
